Step by Step Method
Step 1
Place lamb fat side down on a baking pan, mix the garlic with the oiland work the mixture into the folds, cover the lamb surface completely
Step 2
Season with salt and pepper
Step 3
Grind together the marjoram, thyme and rosmary, spread over the underside of the lamb
Step 4
To BBQ place the meat fat side down on a lightly oiled grill. Close the cover and cook over medium high heat for apprximately 45 minutes. Watch for flare ups but do not flip the roast
Step 5
For oven roast pour the wine and water into a roasting pan, place lamb fat side up on a rack, roast at 375 for 1 hour or until the internal temperature reaches 160f Let stand for 5 minutes before carving
