"I had forgotten about this simple yet flavorful way to bake a potato. We first had this remarkable dish after my wife had gallbladder surgery. One of the nurses told us about this and we are glad they did! You can add butter to this recipe if you like and are not on a restricted diet after surgery. It's amazing how one little bay leaf can make so much flavor... I expected a subtle flavor but it was much stronger than anticipated. I topped with butter, salt, pepper & sour cream.

How did I miss this this recipe, a great way to add flavour to baked potatoes. Admittedly I topped mine with sour cream and added snipping of chives. Anyone on a restricted diet would enjoy it with a touch of salt and pepper. It's that flavorful.

The bay leaf gives the potato a subtle but deliciously savory flavor, that regardless of the topping for the potato, will give the potato the little oomph to make it go from ordinary to extra-special.

What a great way to bake potatoes. I was surprised at how much flavour the bay leaf offered the potato!! Will be doing them this way from now on. Thanks for sharing this here.
