Step by Step Method

Step 1

Heat the olive oil in a pot over medium heat until shimmering. Add the onion, carrots, celery, salt, and pepper. Cook, stirring frequently, until the vegetables are very soft, about 10-15 minutes.

Step 2

Add the garlic and cook until fragrant, for about 1 minute. Add the broth and bring to a boil.

Step 3

Add the noodles and cook for 6 minutes, then add the chicken and cook for about 2 minutes more, until the noodles are tender and the chicken is warmed through.

Step 4

Season to taste with more salt and pepper, then stir in parsley.

Step 5

And serve topped with grated Parmesan.

We loved this basic soup...I did add in some additional spices to up the flavor...a bit of poultry seasoning and thyme along with garlic powder...I used leftover turkey I had in the freezer and made my own broth from the turkey bones...I used Cavataappi Pasta that I available instead of egg noodles...thanks for sharing the recipe...
