  • 2 stalks of celery, chopped
  • 2 cloves garlic, chopped
  • 4 cups chicken broth
  • 4 oz egg noodles
  • 2 cups coarsely shredded chicken
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon freshly ground black pepper, plus more to taste
  • 1/4 cup finely chopped fresh parsley
  • Grated parmesan cheese, for serving

How to Make

  • Step 1: Heat the olive oil in a pot over medium heat until shimmering. Add the onion, carrots, celery, salt, and pepper. Cook, stirring frequently, until the vegetables are very soft, about 10-15 minutes.

  • Step 2: Add the garlic and cook until fragrant, for about 1 minute. Add the broth and bring to a boil.

  • Step 3: Add the noodles and cook for 6 minutes, then add the chicken and cook for about 2 minutes more, until the noodles are tender and the chicken is warmed through.

  • Step 4: Season to taste with more salt and pepper, then stir in parsley.

  • Step 5: And serve topped with grated Parmesan.
