Step by Step Method
Step 1
In a mixing bowl, whisk together the flour, sugar, and salt. Make a well in the center.

In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract.

Pour the wet ingredients into the well of the dry ingredients. Whisk until the batter is smooth and well combined. Let the batter rest for 10 minutes.

While the batter rests, prepare the nut filling. In a small bowl, combine the chopped nuts, honey or maple syrup, and ground cinnamon. Stir until the nuts are evenly coated.
Step 5
Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with vegetable oil.

Pour 1/4 cup of the crepe batter into the hot pan and quickly swirl the pan to spread the batter in a thin, even layer. Cook for about 1-2 minutes, until the edges start to turn golden.
Step 7
Flip the crepe using a spatula and cook for an additional 1-2 minutes on the other side. Repeat with the remaining batter, stacking the cooked crepes on a plate.
Step 8
To assemble, place a crepe on a flat surface and spread a thin layer of the nut filling over the surface of the crepe. Add a few slices of banana on top of the filling.
Step 9
Roll up the crepe tightly, folding in the sides as you go. Repeat with the remaining crepes.
Step 10
Dust the filled crepes with powdered sugar. Serve warm and, if desired, top with whipped cream or a scoop of ice cream.
