Step 1: In a mixing bowl, whisk together the flour, sugar, and salt. Make a well in the center.
Step 2: In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
Step 3: Pour the wet ingredients into the well of the dry ingredients. Whisk until the batter is smooth and well combined. Let the batter rest for 10 minutes.
Step 4: While the batter rests, prepare the nut filling. In a small bowl, combine the chopped nuts, honey or maple syrup, and ground cinnamon. Stir until the nuts are evenly coated.
Step 5: Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with vegetable oil.
Step 6: Pour 1/4 cup of the crepe batter into the hot pan and quickly swirl the pan to spread the batter in a thin, even layer. Cook for about 1-2 minutes, until the edges start to turn golden.
Step 7: Flip the crepe using a spatula and cook for an additional 1-2 minutes on the other side. Repeat with the remaining batter, stacking the cooked crepes on a plate.
Step 8: To assemble, place a crepe on a flat surface and spread a thin layer of the nut filling over the surface of the crepe. Add a few slices of banana on top of the filling.
Step 9: Roll up the crepe tightly, folding in the sides as you go. Repeat with the remaining crepes.
Step 10: Dust the filled crepes with powdered sugar. Serve warm and, if desired, top with whipped cream or a scoop of ice cream.
