"Yeah I know your saying, another banana bread recipe! I grew up on this wonderful banana bread. My Grandmother made it it for years and I still make this and it's always a hit. From my past experiences I say don't sub applesauce for the oil it will be to soft and mushy, the texture will not be good. Makes four small loaves/8 slices each/for 33 servings"

Step by Step Method

Step 1

Heat oven to 350 degrees F.

Step 2

Combine sugar, sour cream, vegetable oil, milk, eggs, and vanilla in a large bowl; beat until creamy.

Step 3

Add mashed bananas; continue beating until well mixed.

Step 4

In a small cup or bowl combine the flour, baking soda, salt and cinnamon, if using. Add to wet mixture beating at low speed until moistened...or better still, use a large spatula for mixing.

Step 5

Gently stir in walnuts.

Step 6

Spread into 4 greased 3-by-5-inch baking pans.

Step 7

Bake for 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; turn out of pan. Cool completely. Cut into slices.

Very good mini loaves. I used the yogurt option - the low fat one I had in the fridge. I also added the blueberries. Perfect for the freezer and just to have on hand. Thanks for sharing!
