Ingredients

The ingredients are:
  • 1 1/2 cups granulated sugar
  • 1 cup sour cream (this works with Greek yogurt also)
  • 1/2 cup oil (vegetable oil)
  • 1/4 cup milk
  • 2 large eggs
  • 2 teaspoon vanilla extract
  • 3 medium bananas (ripe, mashed, about 1 cup mashed mash with your hands or a fork, DO NOT beat with a mixer you want a few small lumps of banana)
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 to 1 teaspoon ground cinnamon (optional)
  • 1 cup walnuts, toasted (chopped, also works with mini chocolate chips or 1 1/2 cups fresh blueberries, or partially thawed frozen)

How to Make

  • Step 1: Heat oven to 350 degrees F.

  • Step 2: Combine sugar, sour cream, vegetable oil, milk, eggs, and vanilla in a large bowl; beat until creamy.

  • Step 3: Add mashed bananas; continue beating until well mixed.

  • Step 4: In a small cup or bowl combine the flour, baking soda, salt and cinnamon, if using. Add to wet mixture beating at low speed until moistened...or better still, use a large spatula for mixing.

  • Step 5: Gently stir in walnuts.

  • Step 6: Spread into 4 greased 3-by-5-inch baking pans.

  • Step 7: Bake for 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; turn out of pan. Cool completely. Cut into slices.
