"Two cups finely crushed herb-flavor packaged stuffing mix may be used in place of the dry bread crumbs, crowned bulk spicy Italian sausage (1/2 pound) may also be added to the mixture Plan ahead there is a 2 hour chilling time, servings is only estimated it will depend on the size that you shape the balls, prep time is 2 hour chilling time"

Step by Step Method

Step 1

In a large bowl combine spinach, bread crumbs, feta cheese, garlic powder, cayenne, black pepper, Italian seasoning, melted butter and eggs.

Step 2

Place the mixture in refrigerator and chill for 2-24 hours (this will allow the flavors to blend and for easier shaping).

Step 3

Grease baking sheet.

Step 4

Shape into about 3/4-inch size balls, then place on baking sheet.

Step 5

Bake in a preheated 350 degree F oven oven for 20 minutes, or until golden brown.

This recipe is so good. Kitten I took you up on the option of adding 1/2 pound sausage meat - perfect.I used spicy Bratwurst. Baked balls were served with sweet asian chili sauce for our Sunday appetizer with  our Martinis- perfect. With the added sausage meat the recipe yielded 35 balls. The remainder are in the freezer (before I could get at them).   Just to add - I froze the left over balls and had some today with our Sunday Martinis - Just great - I left them out for 1 hour before baking, this time I added sweet Asian Chili sauce to the tops of the balls baked in 375 oven for 15 minutes - Perfect - another great Kitten recipe   Thanks
