"I love pickeral. It has firm flesh and is very mild flavoured. I do not egg the fish, I just press the crumb mixture firmly onto the flesh. It stays on beautifully. If you prefer beat two eggs and paint the fish before dipping in the crumbs. Ten minutes to fifteen will be your bake time dependsing on the thickness of the fillets Do not over cook the fish. Serve with a wedge of lemon & tatare sauce"

Step by Step Method
Step 1
Preheat oven to 450F.
Step 2
Mix together the crumbs, potato flakes and parmesan.
Step 3
Season the fillets with salt and pepper.
Step 4
Press the crumbs onto both sides of the fillet.
Step 5
Flip and press more crumbs onto the fish.
Step 6
Place on a baking tray either lightly oiled or that has "relesse" foil on it.
Step 7
Bake until the fish flakes easily.
