"I was given a pound of Pickeral cheeks by a lovely generous friend. This is like being given gold - we simply cannot buy them here. Often the cheeks are dipped in egg, crackeer crumb and fried or floured and deep fried. I decided to fry them with garlic infused butter. They were wonderful. Don't be afraid of the garlic in fact add more if you wish."

Step by Step Method
Step 1
Heat the butter in a large skillet, add garlic..Saute the garlic until it just begins to turn light brown.
Step 2
Have the butter sizzling, add cheeks.
Step 3
Season with salt & pepper and cajun spice..Stir fry for about 5 minutes.
Step 4
Do not overcook they just need to be heated through.
