"A quick and easy dish that is TOTALLY company worthy! This version uses freshly grated parmesan cheese and takes less than 10 minutes to put together. My favorite way to serve is to bake the fish in individual au-grautin "boats". But please NOTE: don't use the grated parmesan in the "green can" - you simply won't get good results in this or any other dish! From Food & Wine."

Step by Step Method

Step 1

Preheat oven to 425F. In a large baking dish, season the fillets with salt and pepper. Or, place each of the four fillets in individual au-gratin dishes.

Step 2

In a small bowl, combine the Parmesan cheese with the bread crumbs, melted butter and olive oil. Sprinkle the mixture evenly over the fillets.

Step 3

Bake for 15 minutes or until the fish is cooked and the topping is golden. Let stand for 5 minutes before serving.

This is really easy to make, very quick. It turned out to be delicious. Crispy on top, but the inside is very moist. There was alot of butter and olive oil left in the skillet, so if you wanted you could pour some in a little dish and dip your fish into it! Thanks for sharing!
