Step 1: Preheat oven to 425F. In a large baking dish, season the fillets with salt and pepper. Or, place each of the four fillets in individual au-gratin dishes.
Step 2: In a small bowl, combine the Parmesan cheese with the bread crumbs, melted butter and olive oil. Sprinkle the mixture evenly over the fillets.
Step 3: Bake for 15 minutes or until the fish is cooked and the topping is golden. Let stand for 5 minutes before serving.
