Ingredients

The ingredients are:
  • 4 fillets (2 pounds) flounder fish
  • 3/4 cup freshly grated Parmesan cheese (NOT the green can stuff!)
  • 1/2 cup bread crumbs (coarse fresh, or packaged bread crumbs)
  • 4 tablespoons unsalted butter (melted)
  • 2 tablespoons olive oil (extra-virgin)

How to Make

  • Step 1: Preheat oven to 425F. In a large baking dish, season the fillets with salt and pepper. Or, place each of the four fillets in individual au-gratin dishes.

  • Step 2: In a small bowl, combine the Parmesan cheese with the bread crumbs, melted butter and olive oil. Sprinkle the mixture evenly over the fillets.

  • Step 3: Bake for 15 minutes or until the fish is cooked and the topping is golden. Let stand for 5 minutes before serving.
