Step by Step Method
Step 1
Preheat oven to 180C.
Step 2
Heat oil in an ovenproof pan over medium heat and cook onion and garlic for 5 minutes or until tender and then stir in tomatoes, chilli flakes, olives and capers and bring mixture to the boil and then add chicken to pan, covering with sauce.
Step 3
Transfer to oven and bake for 20 minutes or until chicken is cooked through and sprinkle with parsley and serve with salad.
