Step 1

Preheat oven to 180C.

Step 2

Heat oil in an ovenproof pan over medium heat and cook onion and garlic for 5 minutes or until tender and then stir in tomatoes, chilli flakes, olives and capers and bring mixture to the boil and then add chicken to pan, covering with sauce.

Step 3

Transfer to oven and bake for 20 minutes or until chicken is cooked through and sprinkle with parsley and serve with salad.

Daily Inspiration

Such an easy dish to put together and the results are really tasty. Made just as directed except that I did lightly brown the chicken in the skillet prior to placing it in the oven. Served this chicken with some Italian roasted potatoes and a salad.
