Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 brown onion, chopped
  • 2 garlic cloves, minced
  • 1 can (800 gram) diced tomatoes
  • 1 teaspoon dried chilli flakes
  • 1 cup kalamata olives
  • 2 tablespoon baby capers, rinsed
  • 1 kilogram boneless chicken breasts (4 fillets)
  • 1/4 cup parsley leaves
  • Green salad, to serve

How to Make

  • Step 1: Preheat oven to 180C.

  • Step 2: Heat oil in an ovenproof pan over medium heat and cook onion and garlic for 5 minutes or until tender and then stir in tomatoes, chilli flakes, olives and capers and bring mixture to the boil and then add chicken to pan, covering with sauce.

  • Step 3: Transfer to oven and bake for 20 minutes or until chicken is cooked through and sprinkle with parsley and serve with salad.
