Baked Chicken With Mushroom Gravy

"I`ve had this recipe for years and used to make it quite often, it also works well using six 1-inch thick boneless pork loin chops. Serve with mashed potatoes, or cooked egg noodles or cooked rice or French fries. Cooking time is for oven cooking only"

Step by Step Method
Step 1
Preheat oven to 350 degrees F.
Step 2
Grease a 13 x 9 baking dish.
Step 3
In a large shallow bowl combine the flour with next five spices (reserve/set aside about 3 tablespoons of the flour mixture).
Step 4
Coat the chicken breasts in the flour mixture (not the reserved 3 tablespoons).
Step 5
Heat butter in a skillet - using NO LESS than 1/4 cup butter (you will need that amount or more to mix with the reserved flour). Add in the chicken then brown well on both sides paying more attention to the skin-side. Transfer to baking pan with skin-side facing up.
Step 6
To the same skillet add in chopped onion, green pepper, mushrooms and garlic (adding in more butter to the skillet if needed). Cook stirring until onions and bell pepper are softened (about 3-4 minutes).
Step 7
Add in the reserved 3 tablespoons of flour to the skillet whisking/blending with butter and pan drippings until blended.
Step 8
Slowly add in the milk or cream whisking until blended; bring to a boil whisking constantly. Reduce heat to low or medium-low, then simmer until thickened. Stir in the 2 tablespoons of lemon juice. Season with salt and pepper if needed. Pour the gravy over the chicken in the baking pan.
Step 9
Cover with foil. Bake (350 degrees F) for 45 minutes.
Step 10
Uncover and continue baking for another 15-20 minutes more or until the chicken is tender (if using pork chops baking time will be will pretty much the same, but if using skin-on bone-in chicken thighs, baking time will need to be reduced slightly).
Step 11
Serve with mashed potatoes or hot cooked noodles or cooked rice or French Fries.
