Step 1

Preheat oven to 350 degrees.

Step 2

Spread the cubed chicken in the bottom of a greased 9 x 13 baking dish in a single layer.

Step 3

Sprinkle the garlic, red pepper flakes and basil evenly over the chicken.

Step 4

Top chicken with the pasta sauce in an even layer.

Step 5

Sprinkle 1 cup of the Mozzarella and one ounce of the Parmesan evenly across the top.

Step 6

Add the crushed croutons, then remaining cheese.

Step 7

Bake, uncovered, for 25 mins or until cheese is melted and sauce is bubbly.

I recently had Bariatric surgery and look for recipes that I can adapt to my new eating plan. I made a mini version of this recipe in 2 ramekins, using 5 ounces of chicken, 1/2 clove garlic, a few shakes of red pepper flakes, 1/8 teaspoon dried basil, 1/2 cup spaghetti sauce, salt and pepper, and 1/2 cup mix of Mozzarella and Asiago cheese. I didn't use the croutons, as I can't have bread. It was good, and I enjoyed it. Thank you for sharing it here with us BusyMiz! Linda
