"I know there's a lot of these recipes I've made many but this one seemed to be a winner so thought I'd share it. For those living at higher elevations this recipe will not work."

Step by Step Method

Step 1

Heat oven to 425F. To start this melt butter in a 12-in. ovenproof frying pan over high heat on top of the stove. Add brown sugar and cinnamon, swirling to combine. Add apple and cook until just starting to soften, about 3 minutes.

Step 2

Meanwhile in a blender whirl together eggs, vanilla, salt, flour, and milk. Pour egg mixture into pan.

Step 3

Transfer to oven. Bake (425F) until puffed and brown, about 15 minutes. Sprinkle with powdered sugar.

This made a very special breakfast for my husband and I for Valentine's Day. He was very impressed and told me how much he loved it. It have to agree, it is delicious! I topped with heated chunky applesauce and a drizzle of maple syrup around the edge.

Delicious - a five star breakfast! I have an oven proof pan bought especially for breakfast recipes such as this. Using my backyard apples I made as posted, came out puffed and perfect! Put a copy in my recipe drawer all ready to impress weekenders!
