Step by Step Method

Step 1

Preheat broiler to high.

Step 2

Combine first 6 ingredients in a medium bowl; stir well to combine.

Step 3

Arrange pepper halves on a jelly-roll pan; divide filling among pepper. Broil 7 minutes or until peppers are tender and beginning to brown. Sprinkle with bacon.

Step 4

Combine jelly and water in a microwave-safe bowl; microwave 30 seconds or until saucy.

Step 5

Drizzle evenly over peppers.

You just can't go wrong with these poppers! From the goat cheese and cream cheese filling to the pepper jelly finishing sauce, together it was a harmony of flavors and an excellent choice to serve when guests are over. To hide some of the goat cheese (to please hubs), added a little extra cream cheese and also used onion powder in place of grated onion to hide the onion from my son - what a mom has to do to please the men in her life. Delicious poppers! Just got done making these for a snack for the hubs and I. I omitted the extra salt as I didn't feel we needed all that sodium, and it wasn't missed at all. I will make them again!

Daily Inspiration

Finally got to make these jalapeno poppers and they were delish. Especially loved the tartness of the goat cheese, the crispy bacon and the jalapeno pepper jelly which I keep on hand to pour over cream cheese. Will be making these delicious poppers again very soon.
