"I found this recipe on the Hungry Girl website, but didn't print it out when I first made it. I didn't remember the type of cheese, and used a light Babybel cheese. Later, I checked the website, and saw that the original recipe calls for Laughing Cow Light Swiss cheese. However, by that time, I found I preferred using Babybel cheese. The combination of apple, onion, and egg sounds peculiar, but it's tasty -- give it a try! NOTE: This recipe serves ONE, but that was not a category choice, and I selected 2 since that was the lowest number."

Step by Step Method
Step 1
Chop onion and apple.
Step 2
Spray a large microwave-safe mug with nonstick spray. I find a mug is not large enough, and I use a bowl.
Step 3
Add apple and onion, then microwave 90 seconds.
Step 4
Pat dry to remove excess moisture. Stir in egg, then microwave 90 seconds.
Step 5
Stir in cheese and seasonings. Microwave 60 seconds or until egg set.
