"I got the idea for these from Derf's wonderful Date Raisin Squares - Microwave recipe#8545. I had an abundance of fresh apriums from my tree to use up, and also thought coconut would be a great addition to the crust. These turned out sooooo Yummy! My oven is broken, but I don't even miss it with these, you can't tell they were made in the microwave. It's the perfect recipe for Summertime!"

Step 1
In a medium mixing bowl, whisk together dry ingredients. Cut in butter and coconut oil until it is crumbly.
Step 2
Press half of the crumbles into the bottom of the baking dish.
Step 3
Smooth apricot preserves over pressed crumbles.
Step 4
Top with remaining crumbles.
Step 5
Microwave on high for 9-12 minutes (1200 watt). *Turn every 3 minutes if your microwave doesn't have a turn table.
Step 6
Remove from microwave, cover with foil, and let sit on counter for 10 minutes.
Step 7
Uncover, cool, and cut into wedges or squares.
