Ingredients

The ingredients are:
  • 1 1/2 cups apricot preserves (I stewed fresh pitted apriums with water and sugar)
  • 1 cup all-purpose flour (can use part whole wheat)
  • 1 cup old-fashioned oats
  • 1/2 cup unsweetened coconut, medium shredded
  • 1 cup light brown sugar (or coconut sugar)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1/4 cup coconut oil

How to Make

  • Step 1: In a medium mixing bowl, whisk together dry ingredients. Cut in butter and coconut oil until it is crumbly.

  • Step 2: Press half of the crumbles into the bottom of the baking dish.

  • Step 3: Smooth apricot preserves over pressed crumbles.

  • Step 4: Top with remaining crumbles.

  • Step 5: Microwave on high for 9-12 minutes (1200 watt). *Turn every 3 minutes if your microwave doesn't have a turn table.

  • Step 6: Remove from microwave, cover with foil, and let sit on counter for 10 minutes.

  • Step 7: Uncover, cool, and cut into wedges or squares.
