Heat the oil in a large frying pan, then fry the bacon and onion together for 10 mins until the bacon is golden.
Lift out of the pan onto a plate, then add the potatoes and fry for 10 mins more until golden.
Add the caraway and paprika, season with salt and pepper to taste, then fry for another min, stirring to release their fragrance.
Return the bacon and onion, add the parsley.
Fry eggs, if using, then put one on top of each serving.

What a great dish! Adding caraway was something new and I really liked it. I opted to use ham and served with sour cream eggs. Made for the Culinary Quest 4.
