Step 1: Heat the oil in a large frying pan, then fry the bacon and onion together for 10 mins until the bacon is golden.
Step 2: Lift out of the pan onto a plate, then add the potatoes and fry for 10 mins more until golden.
Step 3: Add the caraway and paprika, season with salt and pepper to taste, then fry for another min, stirring to release their fragrance.
Step 4: Return the bacon and onion, add the parsley.
Step 5: Fry eggs, if using, then put one on top of each serving.
