Ingredients

The ingredients are:
  • 1 1/2 tablespoons oil (corn, sunflower or vegetable oil)
  • 12 ounces bacon (smoked, lardon or use cooked ham)
  • 1 yellow onion (medium onion, cut into chunks)
  • 1 pound potatoes, cooked (preferably waxy ones, cold and cut into small chunks)
  • 1 teaspoon caraway seed
  • 1 1/2 teaspoon paprika (hot, or sweet paprika, if you can't find hot, use sweet paprika mixed with a pinch of chilli powder)
  • 1 teaspoon parsley, chopped
  • Salt and pepper, to taste

How to Make

  • Step 1: Heat the oil in a large frying pan, then fry the bacon and onion together for 10 mins until the bacon is golden.

  • Step 2: Lift out of the pan onto a plate, then add the potatoes and fry for 10 mins more until golden.

  • Step 3: Add the caraway and paprika, season with salt and pepper to taste, then fry for another min, stirring to release their fragrance.

  • Step 4: Return the bacon and onion, add the parsley.

  • Step 5: Fry eggs, if using, then put one on top of each serving.
