Step 1

Whisk together soy sauce, vinegar, sugar, ginger, garlic and oil; set aside. Toss cooked, cooled noodles with dressing and vegetables. Garnish with sesame seeds, if desired. Serve refrigerating any leftovers.

Except for using hokkein noodles I made this recipe exactly as written. This made for a really lovely and refreshing salad with great Asian flavors. The salad had a subtle sweet, although a not too spicy flavor to it which was enjoyed by the whole family.
