Step 1

Whisk together soy sauce, vinegar, sugar, ginger, garlic and oil; set aside. Toss cooked, cooled noodles with dressing and vegetables. Garnish with sesame seeds, if desired. Serve refrigerating any leftovers.

I made it a point to have all the correct ingredients, and I finally got them! This was super - not only did it taste good, but it even made the house smell good! Yum!

Delightfully delicious! We so thoroughly enjoyed this cool salad on a hot night! Love the wee bit of sweetness. I did make a couple of changes, grated the carrot and added some homemade sriracha as we like sweet heat! I will be making this several more times this summer (now that we are getting it). Except for using hokkein noodles I made this recipe exactly as written. This made for a really lovely and refreshing salad with great Asian flavors. The salad had a subtle sweet, although a not too spicy flavor to it which was enjoyed by the whole family.

Teresa we loved this dish. My husband has declared this the best noodle salad he has ever tried. Kudos on making it into my Best of 2019 cookbook. So much flavor, we really enjoyed the flavors and the textures in this delicious treat. Thanks so much for sharing. Made FYC tag game.
