Step by Step Method
Step 1
Preheat oven to 350 degrees. Spray 8 1/2- by 4 1/2-inch loaf pan with nonstick cooking spray.
Step 2
In large bowl, mix oats, flour, apricots, wheat germ, pecans, baking powder, cinnamon, baking soda, and salt.
Step 3
In small bowl, mix milk, honey, oil, vanilla extract, and egg.
Step 4
Stir the two mixtures together in the large bowl.
Step 5
Pour batter into pan.
Step 6
Bake 45 minutes.
Step 7
Cool on rack 10 minutes. Remove from pan and cool completely on rack.
