  • 1/2 cup oats (rolled oats, uncooked)
  • 1 cup pastry flour, whole wheat
  • 1/2 cup apricots, dried (diced)
  • 1/4 cup wheat germ
  • 1/2 cup honey
  • 1/4 cup oil (canola oil)
  • 1/4 cup pecans (chopped)
  • 2 teaspoons baking powder
  • 1 teaspoons ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup milk
  • 3/4 teaspoon vanilla extract
  • 1 egg

How to Make

  • Step 1: Preheat oven to 350 degrees. Spray 8 1/2- by 4 1/2-inch loaf pan with nonstick cooking spray.

  • Step 2: In large bowl, mix oats, flour, apricots, wheat germ, pecans, baking powder, cinnamon, baking soda, and salt.

  • Step 3: In small bowl, mix milk, honey, oil, vanilla extract, and egg.

  • Step 4: Stir the two mixtures together in the large bowl.

  • Step 5: Pour batter into pan.

  • Step 6: Bake 45 minutes.

  • Step 7: Cool on rack 10 minutes. Remove from pan and cool completely on rack.
