Step 1: Preheat oven to 350 degrees. Spray 8 1/2- by 4 1/2-inch loaf pan with nonstick cooking spray.
Step 2: In large bowl, mix oats, flour, apricots, wheat germ, pecans, baking powder, cinnamon, baking soda, and salt.
Step 3: In small bowl, mix milk, honey, oil, vanilla extract, and egg.
Step 4: Stir the two mixtures together in the large bowl.
Step 5: Pour batter into pan.
Step 6: Bake 45 minutes.
Step 7: Cool on rack 10 minutes. Remove from pan and cool completely on rack.
