"A delicious glazed carrot dish from "Smuckers""

Step 1

Cook carrots, covered, in a small amount of boiling salted water for about 8 minutes or until tender. Drain thoroughly, return to saucepan.

Step 2

Combine butter, jam, lemon juice, salt and mace. Pour over cooked carrots. Cook, stirring constantly until carrots are evenly glazed and heated through

This was very tasty! I used sliced carrots, and had about 1 1/2 pounds. The problem was, there was an incredible amount of liquid... I was expecting something referred to as glaze to be thicker and to leave very little in the pan, but they were swimming. I'll definitely make them again, just cut the sauce ingredients down to about 1/4 of what's listed.

I used fresh sliced carrots and made these using nutmeg instead of mace and they turned out perfectly. What a tasty side this makes.

What a wonderful way to add some "zazz" to cooked carrots! I used nutmeg instead of mace, didn't have it and since they come from the same fruit thought the sub would work just fine. It did! I would have eaten more if I had cooked them. ;)

Lovely light flavour added to the carrots - it went right into my favorite vegetable recipes. Thanks Derf for a lovely side dish with my ham dinner Sept 19th Made for Derf's Cookathon - Loved them just as much as last time. Used carrots from the garden. 1 January 2015 Loved them again 8 Oct 15 And enjoyed them yet again
