"Another recipe found in the Stray Rescue fundraiser cookbook I picked up at a Goodwill thrift store. This one was credited to Sandy Bourne. I did some guessing on the amounts since the original recipe didn't include amounts for the pork, spinach or cheese...so feel free to adjust to your tastes."

Step by Step Method
Step 1
Preheat oven to 350 degrees.
Step 2
Butterfly the pork tenderloin and then pound to about 1/4 inch thickness.
Step 3
Saute apple and onion in olive oil until tender. Mix in breadcrumbs.
Step 4
Top pork with spinach leaves and cheese, so none hangs over the edges.
Step 5
Spread with apple and onion mixture.
Step 6
Roll the tenderloin tightly and secure with toothpicks or baking string. Bake for 30-45 minutes.
Step 7
Let rest a few minutes, then remove toothpicks/string, slice and serve.
