The ingredients are:
  • 2 pounds pork tenderloin (size estimated)
  • 2 tablespoon olive oil
  • 1 apple, chopped (medium apple, peeled and chopped)
  • 1/2 onion, large (chopped)
  • 1/2 cup breadcrumbs
  • 1 cup spinach, fresh
  • 2 slices (2 ounces) provolone cheese (square sandwich size slices)
  • Salt and pepper, to taste
  • Garlic powder, to taste

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Butterfly the pork tenderloin and then pound to about 1/4 inch thickness.

  • Step 3: Saute apple and onion in olive oil until tender. Mix in breadcrumbs.

  • Step 4: Top pork with spinach leaves and cheese, so none hangs over the edges.

  • Step 5: Spread with apple and onion mixture.

  • Step 6: Roll the tenderloin tightly and secure with toothpicks or baking string. Bake for 30-45 minutes.

  • Step 7: Let rest a few minutes, then remove toothpicks/string, slice and serve.
