Step 1: Preheat oven to 350 degrees.
Step 2: Butterfly the pork tenderloin and then pound to about 1/4 inch thickness.
Step 3: Saute apple and onion in olive oil until tender. Mix in breadcrumbs.
Step 4: Top pork with spinach leaves and cheese, so none hangs over the edges.
Step 5: Spread with apple and onion mixture.
Step 6: Roll the tenderloin tightly and secure with toothpicks or baking string. Bake for 30-45 minutes.
Step 7: Let rest a few minutes, then remove toothpicks/string, slice and serve.
