Sometimes I don't make the glaze and have it as dessert with a scoop of ice cream or a spoonful of whipped cream. It is so delicious any way you have it. Now you can even look forward to breakfast!"

Step by Step Method

Step 1

Preheat oven to 350 degrees.

Step 2

Cream butter and sugar together until light and fluffy.

Step 3

Add egg and mix until well combined.

Step 4

Add in vanilla and yogurt and stir.

Step 5

Mix dry ingredients together and add to batter, only mixing until just combined.

Step 6

Fold in apple chunks.

Step 7

Spray 2 (6 ounce) ramekins with non-stick spray and pour batter into them equally.

Step 8

Bake for 30-35 minutes, or until inserted toothpick comes out clean.

Step 9

Brown Sugar Topping: Combine and sprinkle over the tops of the ramekins before baking.

Step 10

For an optional glaze on top, combine confectionary sugar and milk, and whisk until a glaze forms. Pour over top of each ramekin and serve.

What a great find, so different from any of the breakfast recipes I have made! So easy and tastes so good. Added this to my Breakfast/Brunch Cookbook, my summer guests are going to be so surprised when they are served this awesome Breakfast Cake! For company breakfasts will be drizzling with the glaze - that will put right over the top!

This is a great thing to make for breakfast that tastes like a dessert, so if you like dessert for breakfast this is a must try. I loved it and my son did too!

Megan this is so good! I had it for breakfast yesterday morning and it was a piece of heaven in a dish. I added crushed nuts in with the topping for a little added flavor and crunch. I see me and Alex having this often. He thought it was awesome too! I am going to try it with blueberries and raspberries for variation. Yum Yum!
