Ingredients

The ingredients are:
  • 1/4 cup butter (room temperature, for easier mixing)
  • 1/4 cup brown sugar
  • 1 large egg
  • 2 teaspoons vanilla
  • 1/3 cup yogurt (plain Greek)
  • 1/3 cup whole wheat pastry flour (I used regular whole wheat flour successfully)
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • Pinch each - nutmeg, ground ginger and ground cardamom
  • 1 medium (6 ounce) apple (peeled and diced into cubes)
  • BROWN SUGAR TOPPING
  • 1/2 tablespoon all-purpose flour
  • 1 tablespoon brown sugar
  • 1/4 teaspoon ground cinnamon
  • Salt (a pinch)
  • 2 teaspoons butter (melted)
  • GLAZE TOPPING
  • 3 to 4 tablespoons confectioners' sugar
  • Milk (1 to 2 drops, literally a drop)

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Cream butter and sugar together until light and fluffy.

  • Step 3: Add egg and mix until well combined.

  • Step 4: Add in vanilla and yogurt and stir.

  • Step 5: Mix dry ingredients together and add to batter, only mixing until just combined.

  • Step 6: Fold in apple chunks.

  • Step 7: Spray 2 (6 ounce) ramekins with non-stick spray and pour batter into them equally.

  • Step 8: Bake for 30-35 minutes, or until inserted toothpick comes out clean.

  • Step 9: Brown Sugar Topping: Combine and sprinkle over the tops of the ramekins before baking.

  • Step 10: For an optional glaze on top, combine confectionary sugar and milk, and whisk until a glaze forms. Pour over top of each ramekin and serve.
