"These Apple Muffins are incredibly moist and full of apple flavor. Super easy to make and a great way to use up those apples you have laying around. These muffins have a brown sugar topping that gives the top a slight crunch, and then the bottom is super moist. Sometimes I add chopped walnuts in with the batter. So good!"

Step by Step Method

Step 1

Preheat oven to 350 degrees F, and line muffin pan with paper liners.

Step 2

Cream together sugar, eggs, oil, and vanilla.

Step 3

Sift flour, baking soda, salt, and ground cinnamon (I never sift and they turn out fine).

Step 4

Add dry ingredients to creamed mixture, and mix until combined. The batter will be very thick.

Step 5

Add the diced apples.

Step 6

Fill paper liners almost to the top, about 3/4 of the way full.

Step 7

Sprinkle with brown sugar.

Step 8

Bake at 350 degrees F, for 20-24 minutes.

Delicious moist muffins with lots of apples giving them great flavor. I added some chopped pecans too. My new favorite apple muffin and one I will continue to make. So yummy with my coffee!

Delicious muffins! I used Macintosh apples, and peeled the skins. My muffins were much bigger than the ones in the picture. We love muffins here, so I will be saving this to make many times more!

I scaled this back to make 6 for the DS to take to his recreation group for a Melbourne Cup party and they were very much enjoyed. I only used a 1/3 cup of sugar for the six and a good pinch of brown sugar on the top of each and 1/2 a large granny smith apple with skin on, thank you LindasBusyKitchen, made for Alphabet Soup Game.
