Ingredients

The ingredients are:
  • 2 cups granulated sugar (or use 1 1/2 cups for a less sweet muffin)
  • 2 large eggs
  • 1 cup oil
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 3 cups diced apples (peeled, cored, about 3 apples)
  • Brown sugar, for topping (about 1/2 cup)

How to Make

  • Step 1: Preheat oven to 350 degrees F, and line muffin pan with paper liners.

  • Step 2: Cream together sugar, eggs, oil, and vanilla.

  • Step 3: Sift flour, baking soda, salt, and ground cinnamon (I never sift and they turn out fine).

  • Step 4: Add dry ingredients to creamed mixture, and mix until combined. The batter will be very thick.

  • Step 5: Add the diced apples.

  • Step 6: Fill paper liners almost to the top, about 3/4 of the way full.

  • Step 7: Sprinkle with brown sugar.

  • Step 8: Bake at 350 degrees F, for 20-24 minutes.
