Step 1

Cook bacon slice in a nonstick skillet over medium heat until crisp. Remove bacon from skillet; crumble, and set aside. Add onion to bacon drippings in skillet; saute 3 minutes. Add carrots, cider, brown sugar, and pepper; bring to a boil. Reduce heat to medium, and cook 10 minutes or until carrots are tender (do not drain).

Step 2

Place carrot mixture in a large bowl. Sprinkle with crumbled bacon and chives. Serving size is 3/4 cups.

Very vood recipe we liked them alot i used baby carrots so took a while longer to cook

I love carrots and therefore I’m always open to trying new carrot dishes. I’m glad I made this one. The vinegar / brown sugar mixture gave the carrots a punchy caramelly taste, and along with the bacon and chives (I used scallions instead) made for a pretty tasty side. I did though have to cook it longer than 10 minutes to make it fork tender, otherwise, it was pretty tasty. Thank you, Teresa, for sharing!
