Step 1: Cook bacon slice in a nonstick skillet over medium heat until crisp. Remove bacon from skillet; crumble, and set aside. Add onion to bacon drippings in skillet; saute 3 minutes. Add carrots, cider, brown sugar, and pepper; bring to a boil. Reduce heat to medium, and cook 10 minutes or until carrots are tender (do not drain).
Step 2: Place carrot mixture in a large bowl. Sprinkle with crumbled bacon and chives. Serving size is 3/4 cups.
