Step by Step Method

Bronzed Apples


Step 1

Get a large sauté pan heating up over high heat. Once hot, add oil and then add apples. Gently stir apples so they are evenly coated with oil and allow to caramelize for 2-3 minutes. Add butter and sugar and toss until sugar is melted and apples are coated. Allow to cook for 1-2 minutes more, remove from heat and keep warm until ready to use.

In a stainless steel bowl, whisk together the eggs, cider, and butter.

In a separate stainless steel bowl combine flours, sugars, nutmeg, cinnamon, baking powder, baking soda, and salt.

Step 4

Pour dry ingredients into wet and mix until just combined. Don't over mix.

Step 5

Heat a non-stick pan or cast-iron skillet over medium heat and melt a tablespoon of butter. Once melted, add pancake batter in the amount of the desired size of a pancake, cook until bubbles form in batter; flip, and cook for another 2-3 minutes. Repeat until batter is used up.

Step 6

Serve with bronzed apples and a dollop of whipped butter.

This recipe makes big, fluffy pancakes. I did not have to worry any about my apples being hard while waiting because it was hot enough in here to keep everything warm. I tasted the cider. However, the store I shopped did not have the Autumn cider yet, so my cider was not too cidery. It was still really good with the spices added. Yum. Thanks, Mama! I made this for the Food, Friend's, and Fun forum. P S... These are awesome cold to eat as leftovers. Sweet. You can eat them plain out of the fridge. I almost like the leftovers best.

The pancakes were delicious and had a wonderful tangy tone, though it didn't have a heavy vinegar taste at all, just a tangy ambiance. The first two were very dense, and the batter was super thick (had to be spooned as it didn't pour). So I added some water (maybe 1/4 cup or so), and the pancakes after that had a much more palatable texture (though they tasted every bit as wonderful and tangy as the other two). The apples were good as a topping, but they hardened after sitting a few minutes (as I made the pancakes). So I had to re-heat the apples to melt the sugar enough to pour, and that made them mushy. (I don't know if it matters, but I used Gala apples, maybe I'll try a different apple next time that holds up better to cooking). Despite my few issues, they were delicious pancakes, ForeverMama.

Delicious simply delicious. Such great flavors. I love the addition of the apple cider in the batter, its so good. It adds so much more flavor. The apple topping is awesome sweet and tender.
