Step by Step Method
Step 1
Sift the flour and cinnamon into a large bowl and add apple and apricots and stir to combine.
Step 2
Whisk golden syrup, milk and egg in a jug and pour the milk mixture into the flour mixture and stir to combine.
Step 3
Heat a non-stick frying pan over moderate heat and brush with butter.
Step 4
To cook 3 pikelets at a time, spoon 3 heaped tablespoons of batter around the edge of the pan, allowing room for spreading and cook for 1 minute or until golden underneath and then turn, cook for a further minute and then transfer to a heated plate.
Step 5
Repeat with remaining melted butter and batter.
