Ingredients

The ingredients are:
  • 1 cup self-rising flour
  • 1/4 teaspoon ground cinnamon
  • 1 apple, grated (green-skinned apple, peeled)
  • 1/4 cup dried apricots (diced)
  • 2 tablespoon golden syrup
  • 2 tablespoons low-fat milk
  • 1 large egg, lightly whisked
  • 20 grams melted butter

How to Make

  • Step 1: Sift the flour and cinnamon into a large bowl and add apple and apricots and stir to combine.

  • Step 2: Whisk golden syrup, milk and egg in a jug and pour the milk mixture into the flour mixture and stir to combine.

  • Step 3: Heat a non-stick frying pan over moderate heat and brush with butter.

  • Step 4: To cook 3 pikelets at a time, spoon 3 heaped tablespoons of batter around the edge of the pan, allowing room for spreading and cook for 1 minute or until golden underneath and then turn, cook for a further minute and then transfer to a heated plate.

  • Step 5: Repeat with remaining melted butter and batter.
