Step by Step Method

Step 1

Brown chicken breasts in oil over high heat.

Step 2

In a large covered oven proof pan, or casserole, mix tomato, garlic, spinach, cilantro, chili powder, 2 cups of chicken broth and cheese. Place chicken in mixture, cover and bake for 45 minutes in 400ºF oven.

Step 3

Remove chicken, cook and shred.

Step 4

Break pasta into pieces and cook according to package. Drain.

Step 5

In soup pot, place cooked pasta, 4 cups chicken broth, picante sauce, reserved pan sauce, lime juice and chicken. Add salt and pepper to taste and simmer for 10 minutes.

Step 6

Can serve with lime wedges and extra chopped cilantro.
