The original recipe was just for 2 servings and added water and did not include cooking the bell peppers, I feel the changes made the recipe more flavorful. Step 1

Put peppers and vinegar in a small bowl. Let stand.

Step 2

Heat oil in a large skillet over medium heat. Season pork with salt and pepper and add to hot oil. Cook, turning once, until browned, about 8 minutes.

Step 3

Meanwhile mix steak sauce and brown sugar together.

Step 4

Add onion to skillet with chops. Cook, stirring often, until just softened, about 2 minutes. Reduce heat to low and add A.1. steak sauce mixed with the brown sugar. Add in tomatoes and drained bell pepper. Cook, stirring, until bubbling. Cover and cook, turning pork once, for 10 minutes or so until tomatoes burst. Serve!
