"I love this recipe! It is a bit lighter than just the 'classic' stuffed shells with cheese; and sauce has a nice spicy flavor to it. And NO, you do NOT need to boil the shells either. And, all you need is the blender, and 1 saute pan. It's easy, and absolutely delicious."

Step by Step Method

Step 1

Shells .... Add the shells to a 13x9 pan, and add the very hottest tap water you can get - make sure to cover the shells to the top. Cover the pan with a towel, and let it rest 10-15 minutes as you prepare the sauce. One they are slightly soft/tender, remove to a towel, or paper towel to drain and cool.

Step 2

Sauce ... Add everything (but just a pinch of salt and pepper) to a blender, and puree until smooth. Add to a large saute pan and bring to medium low heat, cover and simmer as you prepare the shells.

Step 3

Zucchini ... A hand grater works great for this. Don't worry about the exact amount, a bit more or less does not matter. They will still come out just fine. After grating the zucchini; transfer to a plate lined with a paper towel to drain. Zucchini has lots of water, and you don't want a wet filling.

Step 4

Filling ... Add the cream cheese, ricotta, parmesan, herbs, shallot (and make sure to grate it over the bowl to get all that juice); and, the zucchini. Mix everything to combine. Fill all the shells and set to the side.

Step 5

Cook ... Add the shells to the pan with the simmering sauce, open side up. Add a little of the sauce over the stuffed shells, and cover. Cook 30 minutes on low heat until the pasta is tender.

Step 6

Serve and ENJOY! ... To finish this off, serve and top with grated pecorino romano, and fresh parsley. Serve the classic caesar salad and garlic bread on the side. They are a bit easier, but still delicious; and, a bit healthier - minus all that baked cheese.
