Step by Step Method

Step 1

In first skillet, cook bacon until crisp.

Step 2

Remove bacon from pan, add onions and tomatoes and cook until translucent.

Step 3

Add mushrooms and seasonings, to taste.

Step 4

Cook until saucy and cooked down tight.

Step 5

In second skillet, heat 1 tablespoon butter.

Step 6

Mix the rest of the egg ingredients.

Step 7

Pour 1/2 into pan and when almost set add 2 strips of bacon.

Step 8

Add 1/2 sauce on 1/2 of omelette.

Step 9

Fold over.

Step 10

Repeat.

I loved that instead of cheese, there was the cooked mixture of onions, tomatoes, and mushrooms. So yummy. Then, top that mixture with bacon? Yes! This made 2 huge omelets.

I made this as per recipe for one serve but would suggest that you make sure your filling is well cooked and is fairly dry as mine was still a little wet and the egg broke up a little and I forgot to put the bacon on so served in on the top which hid the bit of egg which broke up and didn't flip properly but it was a very delicious and filling breakfast and the touch of cayenne added I nice bite but I may have been a little more generous than the recipe called for on that but that's the way I like it.
