Step 1: In first skillet, cook bacon until crisp.
Step 2: Remove bacon from pan, add onions and tomatoes and cook until translucent.
Step 3: Add mushrooms and seasonings, to taste.
Step 4: Cook until saucy and cooked down tight.
Step 5: In second skillet, heat 1 tablespoon butter.
Step 6: Mix the rest of the egg ingredients.
Step 7: Pour 1/2 into pan and when almost set add 2 strips of bacon.
Step 8: Add 1/2 sauce on 1/2 of omelette.
Step 9: Fold over.
Step 10: Repeat.
