I am remiss in not reviewing this sooner. I printed out this recipe a couple of months ago and followed to to a "T." Best I've ever made, the crowd loved it, and I've been cooking for going on 40 years. No need to come up with your own recipe, when this lady has the bomb.

Being a Yankee, I know I should have asked permission to even try this recipe, but it's cold up here and that makes me stubborn. This recipe may be simple (simple ingredients, simple prep), but it tastes anything but! It is delicious and just a tiny bit decadent! I used Sriracha for hot sauce, and store-bought vine tomatoes that I had on hand. It all pulled together very quickly, so I recommend a full prep before starting to cook. This was simple and simply delicious. I actually tripled the recipe and divided it between two 2-cup ramekins for a main dish. I used non-fat milk, but did not sacrifice the butter! Because my ramekins were white, I sprinkled just a tinge of Old Bay on top with panko and parmesan for a little bit of color. Served with crusty french bread and a caesar salad, it was a delicious dinner. I would definitely serve this up again for company!

I've been looking for a good meatloaf recipe that didn't include tomato, ketchup, or barbecue sauce. Well, here it is! I cut it in half for one mighty fine loaf! I had some ground meat odds and ends in the freezer, so it ended up being about half beef, one quarter ground pork, and one quarter mild Italian sausage. That said, I did not adjust the seasonings at all, except I had celery seed, not celery salt, so I used that and just upped the regular salt a smidge. I used panko for the breadcrumbs.

The real test is that I had to feed men, and men have a thing about meatloaf, don't they? Well, these men loved this meatloaf! It was moist, but held together well. The flavor was very meaty and manly. All of this with peas, mashed potatoes and gravy have elevated my household status considerably!

Now, I'd like to say I'm giving this five stars, but really it's my husband, because I won't go near oysters before at least 5pm, and then they have to be thouroughly disguised as deep fried crumb balls with dipping sauce. But hey, he LOVED this preparation of eggs and oysters! He had ordered something similar several years ago at a local restaurant, which then burned down (I'm sure it had nothing to do with the dish), and he'd been craving it ever since. I did cut the recipe in half, and used panko instead of cracker crumbs. It worked like a charm....his eyes rolled back up in his head with happiness! Thanks for helping me score brownie points!
