Banana Bread

"I came up with this recipe when I wanted banana bread instead of muffins. I played around with my banana muffin recipe to come up with this and it turned out lovely. Try toasting this and adding a pat of butter, ohhh yum."

The salad dressing added a lot of moisture to the bread and it was delicious. I toasted some and sprinkled with cinnamon and sugar and butter of course and then ate some with cream cheese. Delicious both ways!.

  • 1 large egg
  • 1/2 cup salad dressing (Miracle Whip Salad Dressing)
  • 4 bananas, mashed
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup chopped walnuts, optional
  • 1 teaspoon baking soda

  How to Make

Step 1

Preheat oven to 350 degres Fahrenheit.

Step 2

Grease and flour 9” x 5” loaf pan and line bottom with parchment paper.

Step 3

In large bowl, mix together egg, miracle whip and bananas until well blended.

Step 4

Add remaining ingredients; stir just until moistened.

Step 5

Pour into prepared pan.

Step 6

Bake 1 hour or more, until toothpick inserted in centre comes out clean and bread is a nice golden brown.

Step 7

Cool in pan 10 min.

Step 8

Remove from pan and remove parchment paper.

Step 9

Cool completely on wire rack.

Step 10

Slice and serve.

I made one of these last week to try, and it was so delicious that I decided to make it for tomorrow. I loaded it up with double the nuts and used walnuts and pecans. Gives it such a nice taste. Will be having it with whipped cream cheese.

When I first saw the ingredient Miracle Whip, I have to say I was very skeptical about adding it. It made for an amazingly moist banana quick bread. I was very pleasantly surprised. I added pecans instead of the walnuts, plus I made muffins instead of a loaf. Made for Billboard tag.

What a moist and delicious banana bread recipe! This was so easy to mix together that it was ready in the pan before my oven had finished preheating. I already have a favorite banana bread recipe, but this one intrigued me because of the secret ingredient (Miracle Whip). I had accidentally bought a jar of Miracle Whip Light at the store and wanted to use it up. I wasn't sure how it would turn out, but it worked out so well. So not only did I find a great way to use up that ingredient, but I also found a fantastic banana bread recipe.
