Step by Step Method

Step 1

Preheat oven to 350F.

Step 2

Mix flour, sugar, baking soda, cinnamon and salt together in a mixing bowl.

Step 3

Make a well in the center and addegg, oil, milk, lemon juice and vanilla.

Step 4

Stir mixture together just until moistened.

Step 5

Fold in zucchini, chocolate chips, and walnuts.

Step 6

Pour batter into greased muffin cups and bake for 20-25 minutes until a toothpick tests clean.

Step 7

Cool in pan 5 minutes, then turn out muffins and finish cooling on a wire rack.

These are wonderful!...so easy to make and so delicious...it's a great way to use up some of those zucchinis that are growing wild in your garden...I used regular chocolate chips and about 1/4 cup of walnuts...that's all that I had left...I'll be making these again...made for "Billboard" tag game...
