Step by Step Method

Step 1

Slice onion and cut zucchini in 1/4" rounds.

Step 2

Preheat heavy non-stick skillet (or use cast iron) over medium high heat.

Step 3

Add oil to pan and swirl to cover.

Step 4

Add onion and saute until almost all is carmelized, about 2-4 minutes.

Step 5

Add zucchini and seasonings.

Step 6

Turn down heat slightly (about medium) and cook for 5 - 10 minutes stirring occasionally.

Step 7

Zucchini should be yellow with some brown spots, slightly transparent looking and soft without being mushy.

Step 8

Onions should be thoroughly carmelized and yummy. :-)

This was tasty, Luv. Because I have an abundance of basil decided to add it and so the chili powder wouldn’t compete with it, added less of the chili. In addition to the garlic powder, also added some fresh cloves……along with the caramelized onions, yum, yum. Thank you, Luvcookn, for sharing. Made it for Billboard and CLUE tag games.

Loved this recipe! I used green onions instead of yellow because of dietary issues. Worked fabulously. I've never used chili powder on a zucchini side dish, but it worked perfectly. Thanks for sharing!

Zucchini is not one of my favorite vegetables but I loved this recipe. It is easy and tasty. I cut the recipe back to one zucchini and used 1 teaspoon garlic, one teaspoon chili, just right.
