Step by Step Method
Step 1
Clean potatoes.
Step 2
Place them in a large stockpot and cover with heavily salted water bring them to a boil.

Reduce heat and cook for 20 minutes or until the centers are done but not mushy.

Remove from heat and place in cold water.

Peel potatoes and cut into 1/2-inch pieces.

Add shrimp and vegetables, stirring gently.
Step 7
Pour oil and vinegar over the mixture.

Allow ingredients to marinate for 1/2 hour.

Add mayonnaise and stir gently.

Refrigerate for at least two hours.
